Carolina-style barbecue centers on whole-hog or pork shoulder, smoked low and slow, then pulled or chopped and dressed with a thin, tangy sauce built on vinegar and pepper rather than the thick, sweet tomato-based sauces common elsewhere. In the eastern Carolina tradition, that means a peppery vinegar splash with no ketchup at all. Move toward the Piedmont and you'll find a "lexington dip," a vinegar base with a touch of ketchup and brown sugar for light color and sweetness. Some places in Oviedo blend traditions or offer both styles on the side so you can dress your plate the way you like it. Hush puppies, collards, and vinegar-based slaw are the usual companions, and slaw often goes right on the sandwich.
When you're judging a place, pay attention to bark (the smoky crust on the pork), how much the meat has dried out under a heat lamp, whether the pit uses real wood or wood-assisted gas, and whether the sauce tastes balanced rather than just sour or sugary. Smoke ring color, portion size for the price, and consistency across visits matter too.
